It's hot, no vacations to speak of, life is lazy with no real schedule, don't want to live the summer going through the drive-thru, don't want to slave over a hot BBQ or stove.....so what's for dinner you ask??? I'll tell you!!
Here is your next summertime meal that is easy on the calories for sure and loads you up with tons of fresh ingredients!
SHREDDED CHICKEN TACOS
1 plain rotisserie chicken
2 Serranos, grilled until blackened (Have a gas stove? Lay them on top of a low flame, they blacken quick so watch them!)
12 Tomatillos, husked, washed and grilled till blackened (OR, take a shortcut and use several TBLS of Herdez brand green salsa Verde!)
Olive oil
1 Small red onion, coarsely chopped
4 Cloves garlic (optional)
2 C fresh cilantro, coarsely chopped
2 limes, juiced
4 Tbls local honey (or agave would be fine)
16 or so white or blue corn tortillas
2 C Fave white cheese (Monterrey, queso fresco, pepper jack...you choose)
Directions: Briefly saute chopped blackened tomatillos (if using them) and Serrano's in olive oil then add to food processor.
Place all ingredients (except chicken, cheese and tortillas) in a food processor and whirl away until you think it looks good (go as choppy or as fine as you like).
Shred your chicken and place in the saute pan and pour the tomatillo mixture in. Mix to combine then allow to simmer until it's heated through (or veggies are soft if you did a choppy mix).
Heat your tortillas (either microwave or in a shallow pan).
Fill warm tortilla with chicken mixture and top with cheese. **Optional, add fresh avocado to your taco!
NOW FOR THE SIDE DISH!!!
MELON MINT SALAD
4 C arugula
1 ripe Honeydew melon (cantaloupe would work too)
1/2 C chopped fresh mint leaves
2 small limes, juiced
Freshly ground black pepper
Honey or Agave for drizzling
Olive oil for drizzling
In a large mixing bowl, cube your melon, add chopped mint and olive oil and give quick, gentle toss. Add remaining ingredients to taste.
Serve over bed of arugula.
Wallah!! A perfect summer meal that's easy to fix, easy on the calories and easy to serve a crowd!
